Celeriac

  The corp is sown in open field during Spring of the first year. In Autumn when the root has developed sufficiently it is uprooted. The roots are then placed in an underground tunnel where moisture and temperature is maintained at the right level to induce vernalisation and avoid rotting by simply opening and closing vent holes. This is a system that was developed at our one farms but now it is done at the farmer level in smaller and more simple versions of the tunnel near the production field itself. After the vernilisation process is completed and winter passed, the roots are planted in the open field once again during Spring of the following year. The harvest is completed in September-October of year two.
